WITH Easter just around the corner we ought to mention the really quite amazing selection of eggs available at the market.

We have always flown the flag for free range chicken’s eggs; non free range have never been allowed to sell at the farmers market from the beginning and it seems as if the rest of the retail egg world finally caught up with those ideals in the last few years as now most eggs in use and for sale are free range, but back in 2000 it was still a bit radical.

Naite farm (previously Jaxon’s Farm) have been in the same spot at the market for what seems like for ever and have very competitively priced eggs as well as laid today eggs; as fresh as is possible.

We were keen to introduce a good supply of organic certified eggs and although Newark farm (veg) have always carried a few dozen from rare breed hens I found that they were always sold out by the time I went to do my shopping.

Thus we were delighted when Overton Organic Eggs joined the Organic Aisle in Union Street; thus guaranteeing that there were enough organic chicken’s eggs for all.

Elsewhere you can also find smaller quantities of chicken’s eggs at Frocester Fayre and at Jonathan Crump’s Cheeses (first and third Saturdays).

The selection of eggs at the market on a Saturday doesn’t stop with chicken, however.

Over at Madgett’s free range poultry they have duck eggs and the rather fabulously large goose eggs.

At Frocester they have some duck eggs too and Hinton marsh Farm are adding goose eggs to their mix too, with more and more coming each week now as the season progresses.

The latest addition to the mix has been the Phoenix free range stall which has added Turkey eggs to the mix.

Phoenix did a few markets last year but turkeys don’t lay in the winter apparently and they returned to the market a couple of weeks ago and will be there again this Saturday.

Turkey eggs are a similar size to duck eggs but brown and speckly.

They taste like hens eggs, not too strong, but much creamier, with a high yolk to white ratio, 50-50, so more yolk.
